Recipe: No-Knead Bread – New York Times.

My new favorite homemade bread recipe produces a loaf with a moist, chewy interior and a nice crust, a beautifully balanced loaf and all that is required is time.  No heavy lifting in the kitchen (other than a dutch oven) – no kneading or bread machine or mixer required – just a lot of time to let the yeast, flour and water do their thing.  Check it out… there’s also this video showing Mark Bittman discussing the development of the recipe with Jim Lahey from the Sullivan Street Bakery in New York.
